1 Sweet potato – cubed
1 Cup red onion Juilienned
1 cup cleaned and halved Brussel sprouts
1/2 cup chopped zucchini
1 sliced Jalapeno
1/4 Cup cilantro (for garnish)
1/4 cup Good Life chipotle ketchup
1 Tablespoon garlic
1 Tablespoon onion powder
1 teaspoon salt
- Go once around the pan with olive oil, let heat for a few moments add sweet potato and onion.
- When potatoes start to soften just a bit, add brussels, let carmelize for moment then add Zucchini and Jalapeno.
- When all veggies are cooked down add garlic powder, onion powder, salt & Good Life Chipotle ketchup.
- Finish with fried egg.
